Spaghetti with Meatballs – Trader Joe’s Meatless Meatballs

This is an easy one and one you probably don’t need to read.  However it does point back to the marinara sauce recipe which is what’s really important.  With a little crusty Italian bread to soak up any excess sauce on the plate, a glass of red wine, and Billy Joel playing on the stereo, it doesn’t get much better.

After making the marinara sauce (see previous post linked here), cook some spaghetti according to box directions.     Cook frozen Trader Joe’s Meatless Meatballs according to directions (which is only a minute or two in the microwave).  Put cooked spaghetti on a plate.  Arrange meatballs on the plate with the spaghetti.  Spoon marinara sauce over the spaghetti and meatballs.   Top with grated parmesan cheese. 

You can also use frozen meatballs with meat, if you eat meat.  To me the meat variety does taste better.  Follow cooking directions on the package. 

If you’re a real trooper, you could make your own meatballs.  Some day I’ll do that and write about it.  For now, when you come home hungry, using the frozen meatballs and some previously prepared sauce from the refrigerator, this is about a 15 minute meal.  And also good.

Cooking times are important to avoid mushy spaghetti.  The thin spaghetti in the picture takes only about 6 minutes in boiling water.  If you drain in a colander, you can hit the spaghetti with a quick shot of cold water to slow down any further cooking.

The sauce covered lumps around the plate are the meatless meatballs, just in case you were wondering.
